Ingredients
  

  • 1 tbsp Olive oil
  • 1 Leek, white and light green parts only (chopped)
  • 1 Onion (chopped)
  • 3 Cloves garlic (minced)
  • 2 cups Chicken or vegetable broth (500 ml)
  • 2 cups Water (500 ml)
  • 1 pound Potatoes, peeled and diced (450 g)
  • Salt and pepper to taste

Instructions
 

  • Heat the oil over medium heat in a large pot or Dutch oven. Add the leek, onion, and garlic, and cook until softened, about 5 minutes.
  • Add the broth and water, and bring to a boil. Add the potatoes, and cook until tender, about 15 minutes.
  • Season with salt and pepper to taste.
  • Serve hot with some crusty bread.
