- 6 Large bell peppers, halved lengthwise and seeded
- 1 pound Ground beef
- 1 tbsp Olive oil
- 1 Onion, diced
- 2 Cloves garlic, minced
- 1 cup Uncooked rice
- 1 can Diced tomatoes, undrained (14.5 ounces)
- 1 teaspoon Kosher salt
- 1/2 teaspoon Freshly ground black pepper
- 1/2 cup Grated Parmesan cheese
Preheat the oven to 350 degrees F (175 degrees C).
Heat the olive oil in a large skillet over medium heat.
Add the ground beef, onion, garlic, and rice, and cook until the beef is browned and the rice is tender about 10 minutes.
Stir in the diced tomatoes, salt, and pepper.
