1 pound Boneless, skinless chicken breast (cut into 1-inch pieces) 1 cup Buttermilk 1/2 cup All-purpose flour 1 teaspoon Salt 1/4 teaspoon Black pepper 1/8 teaspoon Cayenne pepper Vegetable oil for frying
In a large bowl, combine chicken, buttermilk, flour, salt, black pepper, and cayenne. Mix well to coat the chicken .
Cover and refrigerate for at least 2 hours or overnight .
Preheat vegetable oil in a deep fryer to 350 degrees F (175 degrees C).
Add chicken pieces to the hot oil, a few at once.
Fry until golden brown and cooked through about 5 minutes .
Remove from oil with a slotted spoon and drain on paper towels.
Serve hot.
