Ingredients
  

  • 5 slices Salmon filet (preferably wild)
  • 5 Tea bags of Earl Gray
  • 2 cups Cherry, seeds removed
  • ½ tbsp Rose pepper (freshly ground)
  • ½ tbsp Ground nutmeg
  • 1 tbsp Honey
  • 4 tbsp Butter
  • 5 cups Water
  • 1 Lemon’s juice and peels
  • ½ tbsp Red wine vinegar

Instructions
 

  • Preheat the oven to 400°F. Place the salmon filets at room temperature.
  • Fill any baking tray with tall sides with 4 cups of water and place the Earl Gray tea bags in it.
  • Put the baking tray in the bottom of the heating oven and leave it there to make an earl gray steam for your salmon.
  • Start by making the cherry sauce. In a saucepan, heat the cherries with the red wine vinegar and lemon peel on medium heat for 4-5 minutes until slightly caramelized.
  • Add 1 cup of water and lemon juice.
  • Cook them on medium heat for 10–12 minutes until they’re slightly sticky but not watery, with a consistent texture.
  • Put it aside to cool.
  • Heat the butter with honey, nutmeg, and rose pepper in the microwave. It’s best to heat it slowly, on low power for 2-4 minutes to avoid splashing. 
  • Bathe the room-temperature salmon filets in the honey-butter-spice mixture. Spread it evenly, and gently rub it into the filets everywhere.
  • Place them in a baking pan and put them in the preheated oven.
  • Don’t cover them.
  • The earl gray steam will cook the salmon to the desired texture in 12 minutes at 400 degrees.
  • Remove the salmon and serve it with the cherry sauce. Baked sweet potatoes, green salads with green apple, and some gin-tonic are perfect to complement this luxurious meal on any occasion.

Notes

While cherry brings a complementary sweetness with just a pinch of sourness. The balance in this salmon recipe is just unmatched! This recipe works best with salmon filet, but you can prepare it with almost any other type of fish, except tuna.
