Instructions
Rub salt and pepper onto the steak the night before. Put the filet mignon into a freezer bag or airtight container overnight. At least 30 minutes before beginning the cooking process, let it come to room temperature.
Preheat the oven to 350 degrees.
Using an oven-proof cast iron skillet, with smoking hot oil and butter, create a deep searing on each side for 3–4 minutes on very high heat.
Flip them over and keep basting them while searing. This creates a deep brown crust that seals in the moisture perfectly while oven-baking.
Transfer the filet mignon in the oven-proof cast iron skillet into the preheated oven without covering it, and bake it for 35 minutes.
Remove the filet mignon and let it rest for 10 minutes before proceeding. This is a must for a perfect dish!
Always slice them against the grain; otherwise, they will be chewy. Serve them with dry white wine, some mashed potatoes, grilled mushrooms, fried sweet potatoes, or glazed potato dumplings.
