Heat oil in a wok. Shallow fry the chicken until brown. Set aside the fried chicken and set aside to cool.
Combine sweet soy sauce, grated palm sugar, garlic and shallot leaves, salt, and ground turmeric in a bowl. Mix well.
Pour this mixture into a wok that has been used for frying chicken and cook until fragrant (do not overcook).
Add the fried chicken and cook until well blended.
Serve hot.
