Ingredients

  • Prime Rib Roast
  • Olive oil
  • Kosher salt or Sea Salt
  • Ground black pepper

Instructions

Step 1: Trim fat from the ribs

  • Start by separating the roast from rib bones. Then remove a tiny layer of fat by slicing slits into the fat cap. Ensure you do not cut the meat as you do; therefore, let your butcher help you with this step.

Step 2: Season the Ribs with salt

  • Ensure you have your ribs a day before cooking them. You will be seasoning it with salt all day long before cooking it.

Step 3: Leave it to marinate

  • Place the roast on a sheet pan. Allow it to sit in the fridge uncovered for a night so that the seasoning can get into it.

Step 4: Preheat the Oven

  • Preheat your oven at 200 if you are using the convection one. If you are not using this kind of oven, preheat it at 225.

Step 5: Add olive oil and ground pepper to the roast

  • As the oven preheats, remove the ribs from the fridge and place them on a rack in a roasting pan. Sprinkle some olive oil and black pepper on it. Then rub these two all over the ribs.

Step 6: Allow the prime ribs to cook

  • Place the roasting pan in the oven and allow the prime ribs to start slow cooking. The ribs should cook at the same temperature to preheat the oven. The period they will take until ready depends on the size.

Step 7: Check the temperature

  • Usually, it can take between 3 to 4 hours for the roast to be well-cooked. So, after this time, you can check the roast's internal temperature using a meat thermometer.
  • If you want it to cook until it is medium-rare, then the internal temperature should ready 120. However, you can allow the ribs to cook to 5 degrees below the degrees you want it done.

Step 8: Remove the meat from the oven

  • At this point, remove the roast from the oven. Then cover it with a foil for about 20 minutes. During this time, turn up the temperature to 500 ºF.

Step 9: Return the roast to the oven

  • Once the oven temperature reaches 500 degrees, it is time to return it to the oven. Remove the foil before placing it back.

Step 10: Allow the roast to cook

  • Allow the roast to cook at 500 degrees temperature for about 10 to 15 minutes. Let it cook until the outside is brown and crispy.
  • After well done, please remove it from the oven and place it on a cutting board. Allow it to rest for 15 minutes, then serve.

Notes

The preparation method is pretty straightforward, and within a few minutes, your prime rib will be in the oven cooking.
