Ingredients
  

  • 1 Polenta tube
  • 1 lb Your favorite protein (I prefer ground beef or turkey)
  • 1 Bell pepper (thinly sliced)
  • 1 Onion (finely chopped)
  • 2 cups Salsa
  • 1 cup Shredded cheese (think Fontina or Parmigiano Reggiano)
  • Optional toppings: sour cream, guacamole, cilantro

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit.
  • Open the polenta tube and cut it into 1-inch-thick slices and place onto a baking sheet.
  • In a large skillet or sauté pan, cook the protein of your choice over medium-high heat until it is browned and fully cooked.
  • In a separate pan, add the sliced bell pepper and onion and cook until they are soft.
  • Stir in the salsa and shredded cheese.
  • Place the polenta slices in the oven for about 15 minutes until they are hot and slightly crispy around the edges.
  • Serve the polenta slices with favorite toppings, such as sour cream, guacamole, or cilantro.
  • Enjoy!

Notes

Once everything has browned and softened, you simply toss it all together to create a deliciously rich and satisfying meal.
