Ingredients

Polenta tube

Your favorite protein
(I prefer ground beef or turkey)

Bell pepper
(thinly sliced)
1
Onion
(finely chopped)
2
cups
Salsa
1
cup
Shredded cheese
(think Fontina or Parmigiano Reggiano)
Optional toppings:
sour cream, guacamole, cilantro
Instructions
Preheat your oven
to 350 degrees Fahrenheit
.
Open the polenta tube and cut it into 1-inch-thick slices and place onto a baking sheet.
In a large skillet or sauté pan, cook the protein of your choice over medium-high heat until it is browned and fully cooked.
In a separate pan, add the sliced bell pepper and onion and cook until they are soft.
Stir in the salsa and shredded cheese.
Place the polenta slices in the oven
for about 15 minutes
until they are hot and slightly crispy around the edges.
Serve the polenta slices with favorite toppings, such as sour cream, guacamole, or cilantro.
