Earl Grey isn't something that usually comes to mind when it comes to holiday recipes, or any recipes at all. However, some of the most well-known chefs use it frequently because of its distinct flavor. This amazing aroma can be infused into cakes, pastries, smoked and oven cooked meats, and fish.
Try to go for fresh turkeys instead of frozen, but if you must thaw the turkey, allow 3-4 days in the fridge for it to be oven-ready.
Take an appropriately sized roasting pan, preferably with smaller sides. Prepare the turkey by rinsing, tying, and cleaning it.
Then fold the wings back and tie the drumsticks loosely together. Mesh all of your ingredients together, then heat them in a pan on medium heat for a few minutes to mix the flavors and temperatures.
Baste and rub the turkey, as well as the cavities, and repeat the rubbing on the outside every 40 minutes while baking.
Separately, cook the stuffing of your choice, infusing it with some of the cooking juices from your turkey.

Cook the turkey at 350°F for 3-4 hours.
Rotate it sometime in the middle, around 1.5 hours to 2 hours.
If it’s not cooking evenly, use some tin foil to cover already cooked areas and prevent them from overcooking.
Let the turkey rest for 20-30 minutes before cutting it for proper moisture retention.
