King Arthur Gluten-Free Bread Recipe

Ingredients
  

  • 1 1/2 cups Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 1/2 teaspoon Salt
  • 1 tbsp Instant yeast
  • 1/4 cup Sugar
  • 1/4 cup Vegetable oil
  • 2 Eggs (beaten)
  • 1/2 cups Warm water

Instructions
 

  • Whisk together the flour, xanthan gum, salt, yeast, and sugar in a large bowl.
  • Add the oil and eggs, and mix until well combined.
  • Gradually add the warm water, mixing until the dough is soft and slightly sticky.
  • Place the dough in a greased bowl, cover, and let rise in a warm place for about an hour.
  • Preheat the oven to 350 degrees Fahrenheit.
  • Grease and flour a 9x5 inch loaf pan.
  • Transfer the dough to the prepared pan, and let rise for another 30 minutes.
  • Bake the bread for 30-35 minutes, or until golden brown.
  • Let the bread cool in the pan for a few minutes before removing it to a wire rack to cool completely.

Notes

Note: If you don't have instant yeast, you can use active dry yeast. Just proof it in some warm water before adding it to the rest of the ingredients.
This bread is best served fresh, but it can be stored in an airtight container for a few days.
