Brunswick Stew Pioneer Woman Recipe
Traditionally, Brunswick stew is made with various meats, including chicken, pork, and beef. But the key ingredient is tobacco-laced barbecue sauce, which gives the dish its unique flavor profile.

- 2 pounds Whole tomatoes (quartered or cut into smaller pieces)
- 1 Whole chicken stock (the better the quality, the better your stew will be)
- 4-5 Whole potatoes (peeled and cut into chunks)
- 2-3 Carrots (peeled and cut into chunks)
- 1 White or yellow onion (chopped)
- 4 cups Cooked butter beans (or lima beans) (if you can't find them canned, get them dried and cook them ahead of time)
- Bacon grease or olive oil – to taste
- Salt and Pepper to taste
In a large stockpot, cook the tomatoes and potatoes over medium heat in bacon grease (or olive oil, if you prefer) until they soften.
Add the chicken stock and bring it to a boil.
Add the carrots, onion, and butter beans and simmer for 30 minutes to an hour, or until the vegetables are cooked.
Season with salt and Pepper to taste. Serve hot with some cornbread on the side.
