Ingredients
  

  • 2 pounds Whole tomatoes (quartered or cut into smaller pieces)
  • 1 Whole chicken stock (the better the quality, the better your stew will be)
  • 4-5 Whole potatoes (peeled and cut into chunks)
  • 2-3 Carrots (peeled and cut into chunks)
  • 1 White or yellow onion (chopped)
  • 4 cups Cooked butter beans (or lima beans) (if you can't find them canned, get them dried and cook them ahead of time)
  • Bacon grease or olive oil – to taste
  • Salt and Pepper to taste

Instructions
 

  • In a large stockpot, cook the tomatoes and potatoes over medium heat in bacon grease (or olive oil, if you prefer) until they soften.
  • Add the chicken stock and bring it to a boil.
  • Add the carrots, onion, and butter beans and simmer for 30 minutes to an hour, or until the vegetables are cooked.
  • Season with salt and Pepper to taste. Serve hot with some cornbread on the side.
