Ingredients
  

  • 1 tbsp Olive oil
  • 1 Onion (diced)
  • 6 Cloves garlic (minced)
  • 1 Bell pepper (diced)
  • 1 Can of diced tomatoes, undrained (14.5 ounces)
  • 1 can Dice green chilies (undrained)
  • 2 tbsp Chopped fresh cilantro
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 can Black beans, rinsed and drained (15 ounces)
  • 1/2 cup Salsa
  • 1/2 cup Sour cream

Instructions
 

  • In a large saucepan, heat the oil over medium heat. Add the onion, garlic, and bell pepper and cook until tender.
  • Stir in the tomatoes, green chilies, cilantro, cumin, chili powder, salt, and black pepper. Bring to a boil.
  • Reduce the heat to low and simmer for 10 minutes. Stir in the black beans and salsa. Simmer for 5 minutes.
  • Remove from the heat and stir in the sour cream. Serve with tortilla chips or over rice.
