1 tbsp Olive oil 1 Onion (diced) 6 Cloves garlic (minced) 1 Bell pepper (diced) 1 Can of diced tomatoes, undrained (14.5 ounces) 1 can Dice green chilies (undrained) 2 tbsp Chopped fresh cilantro 1 teaspoon Ground cumin 1 teaspoon Chili powder 1/4 teaspoon Salt 1/4 teaspoon Black pepper 1 can Black beans, rinsed and drained (15 ounces) 1/2 cup Salsa 1/2 cup Sour cream
In a large saucepan, heat the oil over medium heat. Add the onion, garlic, and bell pepper and cook until tender.
Stir in the tomatoes, green chilies, cilantro, cumin, chili powder, salt, and black pepper. Bring to a boil.
Reduce the heat to low and simmer for 10 minutes . Stir in the black beans and salsa. Simmer for 5 minutes.
Remove from the heat and stir in the sour cream. Serve with tortilla chips or over rice.
