1 1/2 lb Filet mignon (trimmed) Salt and freshly ground black pepper 1 tbsp Olive oil 1/2 cup Dry red wine 1/4 cup Beef broth 2 tbsp Butter 1 Shallot (minced) 2 Cloves of garlic (minced)
1. Preheat the oven to 400 degrees F (200 degrees C). Season the filet mignons all over with salt and pepper.
Heat a large non-stick skillet over high heat. Add the filet mignons and cook for about 2 minutes per side , or until evenly browned.
Remove the filets from the pan and set them aside. Add the olive oil to the pan.
Add the wine, beef broth, butter, shallot, and garlic. Cook for about 2 minutes , or until the sauce has reduced by half.
Return the filet mignons to the pan and spoon the sauce over them.
Bake for about 10 minutes or until the fillets are cooked to your desired degree of doneness.
Serve immediately with the sauce spooned over the top.
