Ingredients
  

  • 1 1/2 lb Filet mignon (trimmed)
  • Salt and freshly ground black pepper
  • 1 tbsp Olive oil
  • 1/2 cup Dry red wine
  • 1/4 cup Beef broth
  • 2 tbsp Butter
  • 1 Shallot (minced)
  • 2 Cloves of garlic (minced)

Instructions
 

  • 1. Preheat the oven to 400 degrees F (200 degrees C). Season the filet mignons all over with salt and pepper.
  • Heat a large non-stick skillet over high heat. Add the filet mignons and cook for about 2 minutes per side, or until evenly browned.
  • Remove the filets from the pan and set them aside. Add the olive oil to the pan.
  • Add the wine, beef broth, butter, shallot, and garlic. Cook for about 2 minutes, or until the sauce has reduced by half.
  • Return the filet mignons to the pan and spoon the sauce over them.
  • Bake for about 10 minutes or until the fillets are cooked to your desired degree of doneness.
  • Serve immediately with the sauce spooned over the top.
