Beef barley Soup Pioneer Woman Recipe

This recipe is made in the slow cooker, hence the cooking time of 8 hours. However, if you want, you can make the soup the traditional way. So, you only have to cook it for half an hour to 45 minutes.

Ingredients
  

  • 1 pound Beef stew meat
  • 1 Onion (diced)
  • 3 Cloves garlic (minced)
  • 2 Carrots (diced)
  • 1 cup Barley
  • 8 cups Beef broth
  • Salt and pepper to taste

Instructions
 

  • Place the beef, onion, garlic, and carrots in a crockpot. Add the barley and beef broth. Season with salt and pepper to taste.
  • Cook on low for 8 hours, or until the beef is cooked through.
  • Serve hot and enjoy!

Notes

Note: Many people choose thick beef barley soup because it gives the dish a heartier texture. To do this, simply remove 2 cups of the soup before adding the barley. Once the barley has cooked through, add the soup back in and stir. This will slightly thicken the soup without changing the flavor. However, if you prefer a thinner soup, feel free to omit this step.
