1 pound Ground beef 3 tbsp Pork fat Dried ancho chiles Salt Garlic Smoked paprika Black pepper Rose pepper Ground marjoram ground cumin Ground coriander White onion Red wine vinegar
To begin, toast the chiles until they turn color. Then soak for a few minutes in water. Chop them up.
Except for the ground beef, combine the remaining ingredients in a blender.
Combine the blended mixture, ground beef, and toasted drained chiles.
Cook for 8-10 minutes over medium heat in an iron skillet or until it begins to brown.
Allow it to rest for 10 minutes after it has finished cooking.
Serve with potato salad, corn tortillas, and salsa on the side.
