Ingredients
  

  • 1 Pork loin (bone-in)
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Smoked paprika
  • 1 tbsp Olive oil
  • 1/2 cup Chicken stock

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • In a small bowl, combine the salt, pepper, cumin, smoked paprika, and olive oil. Rub the mixture all over the pork loin.
  • Place the pork in a roasting pan, and add the chicken stock.
  • Roast the pork for 45 minutes or until the internal temperature reaches 145 degrees Fahrenheit.
  • Remove the pork from the oven, and allow it to rest for 5-10 minutes before slicing and serving.
