Ingredients
  

  • 2 Turkey legs (thawed)
  • 1/2 cup Kosher salt
  • 1/2 cup Sugar
  • 1 gallon Water
  • 1/2 cup Apple cider vinegar
  • 2 tbsp Smoked paprika
  • 1 tbsp Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Black pepper

Instructions
 

  • In a large pot or container, combine the salt, sugar, water, and vinegar. Stir until the salt and sugar have dissolved.
  • Add the turkey legs to the brine, submerging them completely. Cover and refrigerate for at least 2 hours or up to 12 hours.
  • Preheat your oven to 275 degrees Fahrenheit.
  • In a small bowl, combine the smoked paprika, garlic powder, onion powder, and black pepper.
  • Remove the turkey legs from the brine and dry them with paper towels. Rub the spice mixture all over the legs.
  • Place the turkey legs on a rack in a roasting pan and roast for 2-3 hours, or until the internal temperature of the meat reaches 165 degrees Fahrenheit.
  • Let the turkey legs rest for 10-15 minutes before carving and serving.
