1 cup Unsalted butter, at room temperature (2 sticks) 1/2 cup Granulated sugar 1/2 cup Packed light brown sugar 2 teaspoons Vanilla extract 2 cups All-purpose flour 1/4 teaspoon Salt 1 cup Chopped pecans (optional)
Preheat the oven to 350°F . Line a baking sheet with parchment paper.
Cream butter and sugars until light and fluffy in a large bowl. Beat in vanilla.
In another bowl, whisk together flour and salt. Gradually add to the butter mixture, mixing until just blended. Stir in pecans if using.
Scoop dough by the tablespoonful onto the prepared baking sheet. Bake until cookies are lightly golden brown, about 15 minutes .
Let cookies cool on the baking sheet for 5 minutes; transfer to a wire rack to cool completely.
