Lorna Doone Cookies Recipe

If you've never had Lorna Doone cookies, you're in for a real treat! These delicate shortbread cookies are delicious melt-in-your-mouth and so easy to make. This recipe is a copycat of the popular Lorna Doone cookies you can find in stores, and it's just as good.

Ingredients
  

  • 1 cup Unsalted butter, at room temperature (2 sticks)
  • 1/2 cup Granulated sugar
  • 1/2 cup Packed light brown sugar
  • 2 teaspoons Vanilla extract
  • 2 cups All-purpose flour
  • 1/4 teaspoon Salt
  • 1 cup Chopped pecans (optional)

Instructions
 

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • Cream butter and sugars until light and fluffy in a large bowl. Beat in vanilla.
  • In another bowl, whisk together flour and salt. Gradually add to the butter mixture, mixing until just blended. Stir in pecans if using.
  • Scoop dough by the tablespoonful onto the prepared baking sheet. Bake until cookies are lightly golden brown, about 15 minutes.
  • Let cookies cool on the baking sheet for 5 minutes; transfer to a wire rack to cool completely.
