Ingredients
  

  • 1/2 cup Diced tomatoes (drained)
  • 1/4 cup Diced red onion
  • 1 tbsp Diced celery
  • 1 tbsp Diced green bell pepper
  • 1/4 cup White vinegar
  • 1/4 cup Olive oil
  • 1 tbsp Sugar
  • 1 tbsp Tomato paste
  • 1 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 Clove of garlic (minced)

Instructions
 

  • In a food processor or blender, combine the tomatoes, red onion, celery, green bell pepper, vinegar, olive oil, sugar, tomato paste, salt, black pepper, and garlic.
  • Puree until smooth.
  • Taste and adjust seasoning as necessary.
  • Store in a covered container in the refrigerator for up to 1 week.
