1 pound Langostino lobster (cooked and chopped) 1 pound Yukon Gold potatoes (peeled and cut into chunks) 1/2 cup Heavy cream 1/4 cup Butter 2 Cloves garlic (minced) 1 Shallot (minced) 1 teaspoon Chopped fresh thyme Salt and pepper to taste
In a large pot, cook the potatoes in boiling water until tender .
In a separate pan, melt the butter over medium heat. Add the garlic and shallot, and cook until softened.
Add the lobster and thyme, and cook for 2 minutes .
Drain the potatoes and add them to the pan with the lobster. Add the cream, and mash the potatoes until desired consistency is reached .
Season with salt and pepper to taste.
