Slice zucchini in half lengthwise and cut into 1/4 inch slices. Place on a baking sheet lined with parchment paper. Drizzle olive oil over the top of the zucchini, and sprinkle salt and pepper.
Roast for 10 minutes or until tender when pierced with a fork. Let cool before serving.
