Grandma Browns Baked Beans
This recipe is for a copycat version of Grandma Brown's Baked Beans. It is a simple recipe that can be easily followed. Anyone can make these delicious beans!

- 1 lb Navy beans
- 1 tsp Baking soda
- 8 cups Water
- Salt to taste
- 1/2 lb Ham or bacon
- 1 cup Dark brown sugar
- 1 Onion (optional)
- 1 Bay leaf (optional)
Soak the beans overnight in cold water. (You can also do a "quick soak" by boiling the beans for 2 minutes, then removing them from heat and letting them sit in hot water for an hour.)
Drain the beans and add them to a large pot with the baking soda and 8 cups of fresh water.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Add salt to taste and simmer for another 30 minutes.
Add the ham or bacon, brown sugar, onion, and bay leaf (if using) and simmer for another 1-2 hours, or until the beans are tender and the sauce is thickened.
Discard the bay leaf before serving.
Serve with cornbread or over rice.
