- 1 tablespoon One of olive oil
- 1 Onion (chopped)
- 2 Cloves of garlic (minced)
- 3 cups Cooked shredded chicken
- 1 can White beans, drained and rinsed (15-ounce)
- 1 can Diced green chillies (4-ounce)
- 1 teaspoon Ground cumin
- 1 teaspoon Chilli powder
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 can Diced tomatoes, undrained (14.5-ounce)
- 1 cup Chicken broth
- 1 tbsp Chopped fresh cilantro
Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Stir in the chicken, white beans, green chillies, cumin, chilli powder, salt, pepper, tomatoes with their juice, chicken broth and cilantro.
Bring to a simmer and cook until heated through about 10 minutes.
Serve in individual bowls.
