Ingredients
  

  • 1 tablespoon One of olive oil
  • 1 Onion (chopped)
  • 2 Cloves of garlic (minced)
  • 3 cups Cooked shredded chicken
  • 1 can White beans, drained and rinsed (15-ounce)
  • 1 can Diced green chillies (4-ounce)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chilli powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 can Diced tomatoes, undrained (14.5-ounce)
  • 1 cup Chicken broth
  • 1 tbsp Chopped fresh cilantro

Instructions
 

  • Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Stir in the chicken, white beans, green chillies, cumin, chilli powder, salt, pepper, tomatoes with their juice, chicken broth and cilantro.
  • Bring to a simmer and cook until heated through about 10 minutes.
  • Serve in individual bowls.
