- 1 pound Chicken breast (cut into bite-sized pieces)
- 8 ounces Pasta (cooked according to package directions)
- 1/2 teaspoon Cajun seasoning
- 1 tbsp Olive oil
- 1/2 Red onion (diced)
- 2 Cloves of garlic (minced)
- 1/4 teaspoon Crushed red pepper flakes
- 1/2 Green bell pepper (diced)
- 1/2 Yellow bell pepper (diced)
- 14.5 ounces Diced tomatoes
- 4 ounces Tomato sauce
- 1/4 cup Chopped parsley
- 1/2 cup Grated Parmesan cheese
- Salt and black pepper to taste
- Chopped mushrooms (optional)
Season chicken with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned, about 3 minutes.
Add onion, garlic, red pepper flakes, bell peppers, diced tomatoes, and tomato sauce to the skillet.
Bring to a simmer and cook for 5 minutes.
Add cooked pasta and parsley to the skillet and toss to combine. Stir in Parmesan cheese and season with salt and black pepper to taste.
Serve immediately.
