Cajun Chicken Pasta (Pioneer Woman)

Ingredients
  

  • 1 pound Chicken breast (cut into bite-sized pieces)
  • 8 ounces Pasta (cooked according to package directions)
  • 1/2 teaspoon Cajun seasoning
  • 1 tbsp Olive oil
  • 1/2 Red onion (diced)
  • 2 Cloves of garlic (minced)
  • 1/4 teaspoon Crushed red pepper flakes
  • 1/2 Green bell pepper (diced)
  • 1/2 Yellow bell pepper (diced)
  • 14.5 ounces Diced tomatoes
  • 4 ounces Tomato sauce
  • 1/4 cup Chopped parsley
  • 1/2 cup Grated Parmesan cheese
  • Salt and black pepper to taste
  • Chopped mushrooms (optional)

Instructions
 

  • Season chicken with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned, about 3 minutes.
  • Add onion, garlic, red pepper flakes, bell peppers, diced tomatoes, and tomato sauce to the skillet.
  • Bring to a simmer and cook for 5 minutes.
  • Add cooked pasta and parsley to the skillet and toss to combine. Stir in Parmesan cheese and season with salt and black pepper to taste.
  • Serve immediately.
