- 1 pound Langostino lobster (cooked and chopped)
- 1 pound Yukon Gold potatoes (peeled and cut into chunks)
- 1/2 cup Heavy cream
- 1/4 cup Butter
- 2 Cloves garlic (minced)
- 1 Shallot (minced)
- 1 teaspoon Chopped fresh thyme
- Salt and pepper to taste
In a large pot, cook the potatoes in boiling water until tender.
In a separate pan, melt the butter over medium heat. Add the garlic and shallot, and cook until softened.
Add the lobster and thyme, and cook for 2 minutes.
Drain the potatoes and add them to the pan with the lobster. Add the cream, and mash the potatoes until desired consistency is reached.
Season with salt and pepper to taste.
