Reduce the roast's cooking liquid over high heat for 20 to 30 minutes, until the liquid is the consistency of a gravy.
1 tablespoon butter (optional)
Salt and pepper to taste
2 teaspoons all-purpose flour
Preparation:
Trim off excess fat from roast and season all over with 1 teaspoon salt and 1 teaspoon pepper. Toss together flour and remaining salt and pepper in a bowl.
Press [Sauté] on the Instant Pot and add oil. When hot, add beef roast and brown on all sides, about 10 minutes total. Transfer to a plate. Add water to [Sauté] pot and deglaze by scrubbing the flavorful brown bits off the bottom of the pan with a wooden spoon.
Pour water and drippings from the plate into [Sauté] pot and stir well.
Close Instant Pot Lid, and make sure the steam release handle is in the 'Sealing' position. Press [Manual], then press [Pressure] until the light on 'High Pressure' turns on. Then adjust the +/- buttons until the time reads 60 minutes.
