- lb Fresh jalapeno peppers (seeded and chopped)
- 1 jar Diced pimentos (drained) (4 oz)
- ½ cup Apple cider vinegar
- 2 ½ cups Sugar
Combine the jalapeno peppers, pimentos, vinegar, and sugar in a large pot.
Bring to a boil over medium heat, stirring frequently.
Reduce heat and simmer for 10 minutes or until the mixture thickens.
Remove from heat and let cool slightly.
Transfer the jelly to an airtight container and refrigerate for 2 weeks.
