  • 50 ml Dark beer, ideally Guiness
  • ½ cup Vegetable oil
  • ¼ tbsp Baking soda
  • ¾ cup Dark brown sugar
  • ½ cup Baking flour
  • ½ cup All-purpose flour
  • 1.5 tbsp Ground ginger
  • ½ tbsp Ground cinnamon
  • A pinch of salt
  • ½ Lime zest
  • 1 Lime peel
  • 2 Large eggs

For the Frosting:

  • 4 tbsp Unsalted butter at room temperature (big ones)
  • 1 cup Confectioners’s sugar
  • 2 tbsp Lime juice
  • 1 tbsp Whole milk
  • Candied lime peel (or any citrus)

Instructions
 

  • Preheat your oven to 350°F. Fill a standard 12-cup muffin pan with liners.
  • Stir together the dark beer, vegetable oil, baking soda, sugar, and spices over medium heat. Allow them to cool after carefully heating them until boiling.
  • In a separate bowl, combine all of the remaining ingredients, leaving the eggs for last. Lastly, slowly add the eggs one at a time, gently mixing them.
