Traditional short ribs are cut from the lower rib cage of the cow, but you can find so-called pork short ribs, which are very similar, and bison short ribs, which are more fruity and sweet as well.

This recipe incorporates a very popular and tasty Thai peanut sauce, but there are tons of possibilities when it comes to seasoning ribs. It can be fruity, sweet, savory, spicy, or sour.

There are amazing sauces and short rib recipes in western cuisine, but it’s worth taking a look at other traditional cuisines for inspiration. There are so many amazing, flavorful recipes in the Korean, Thai, Vietnamese, Italian, Polish, Indian, and many other traditions. You can also infuse different kinds of culinary traditions.

Probably the tastiest you can find, and the priciest also, are wagyu short ribs. A healthy and fresh wagyu should be finely marbled and light pink in color, with a smooth texture. Although short ribs are not the healthiest meal to choose from, once in a while it is perfectly acceptable in an otherwise balanced diet, especially consumed with vegetables.

What is the best cooking time and temperatures for short ribs?

Short ribs cooking time and temperature

When you’re cooking short ribs, their internal temperature must reach 200 degrees to be considered safe to eat. Consider investing in a meat thermometer, because that is the easiest way to know for sure when meat is done.

At 400 degrees Fahrenheit, you should cook short ribs for about 25 minutes, at 350 degrees, it takes them 45-55 minutes to cook.

Slow cooking short ribs, be it beef or pork, is also a great option to make them tender and soft inside, crispy outside. When slow cooking short ribs, bake them at 275 degrees for 1 h 45 minutes to 3 hours.

There is the bone-in or boneless version of short ribs. This also affects cooking times. The Bone-in version requires 20% more time to be done, this is also something to consider.

The above-given cooking times are for bone-in short ribs, both beef, and pork

At 350 degrees in the oven, it takes 45 minutes to one hour for short ribs to be done. While this is true for bone-in ribs, for boneless ones the cooking time is about 30% less. Besides oven baking, grilling, smoking, and braising are also excellent ways to prepare short ribs.

Short ribs should be lip-smackingly sticky, golden brown and tender, and glossy. They are not light and easy, so it’s suggested to air them with lighter dishes, such as salads, steamed veggies. You can enjoy them medium-rare, medium, or well-done. Rare is avoidable if you choose pork short ribs. Pork shouldn’t be eaten rare, because it’s not safe.

You can either go for Flanken or English-style ribs, the outcome will be exactly the same. There is no difference in the cooking process. Both will love a good amount of butter, acidity, some sugary, and spicy ingredients.

Can I use 400 degrees to cook short ribs?

At 400 degrees it takes around 25-35 minutes for pork or beef short ribs to be ready. Short ribs are very good with high heat, so it’s perfect to cook them at 400 degrees Fahrenheit in the oven. They need slightly less time to be done than with lower heat, and you might need to keep an eye on them to avoid drying out or burning.

If you prefer to cook short ribs on higher heat in the oven, pour some beef broth under the ribs onto the baking tray to keep the meat from drying or burning.

Another way to cook them on a higher heat, but avoiding dryness, is to sear them in a cast-iron skillet beforehand, on each side. It’s good to keep brushing them with the sauce every 20-30 minutes while it’s in the oven to keep infusing it with aromas.

Most chefs suggest to get the best out of your short ribs, go for slow roasting at 275 degrees for 2-3, or even 4 hours.

Understandably, most of us don’t have that much time for everyday meals, but for special occasions, it’s worth a try, because it yields a really deep flavored and complex dish as opposed to high-heat, fast cooking.

Tips and tricks for a better recipe

You can buy beef or pork short ribs in many cuts such as flanken or English cut. With English, ribs are cut parallel to the bone, having the cut one bone per piece sold. Flanken is cut across the bone and so has three or four sections of bones in a piece sold with more meat on the cut.

In a medium or well-done short rib, the meat should fall apart from the bone when slightly pulled once it’s done.

The meat should be darker brown on the outside, pinkish inside, and very tender.

Short ribs can be very soft and perfectly tender if you marinate them in buttermilk or coconut milk, which softens the meat beforehand. Leave them in the sauce overnight in the fridge in an airtight container or freezer bag.

Coating them in slightly acidic sauces, or with a batch of alcohol is also a great way to infuse the short ribs with flavor and cook them tender. These sauces can be made with white or red wine vinegar, balsamic vinegar, rice vinegar, beers, spirits, or wines.

Final Words

It’s best to cook beef or pork short ribs on an outdoor grill to have that strong smokey flavor. That doesn’t mean you can’t make them deliciously in an oven. With plenty of spices, sauces, and seasoning, they can be made into an amazing main dish.

If you want to try something different, source some bison short ribs. These taste slightly different than beef or pork ones. It’s sweeter, fruity, more tender, and goes well with acidic and sour ingredients. Another dish I absolutely cant live without is prime rib. However it can be a bit tricky to get right. You can also make short ribs in a slow cooker or air fryer. Both take much more time, around 2-3 hours to cook, but it’s well worth the time and hassle. They are one of the most popular cuts of beef and for a very good reason. It’s so easy to make them, hard to miss or ruin, taste amazing, and easy to pair with all kinds of side meals.
