Step 1: Trim fat from the ribs

  • Start by separating the roast from rib bones. Then remove a tiny layer of fat by slicing slits into the fat cap. Ensure you do not cut the meat as you do; therefore, let your butcher help you with this step.

Step 2: Season the Ribs with salt

  • Ensure you have your ribs a day before cooking them. You will be seasoning it with salt all day long before cooking it. 

Step 3: Leave it to marinate

  • Place the roast on a sheet pan. Allow it to sit in the fridge uncovered for a night so that the seasoning can get into it.

Step 4: Preheat the Oven

  • Preheat your oven at 200 if you are using the convection one. If you are not using this kind of oven, preheat it at 225.

Step 5: Add olive oil and ground pepper to the roast

  • As the oven preheats, remove the ribs from the fridge and place them on a rack in a roasting pan. Sprinkle some olive oil and black pepper on it. Then rub these two all over the ribs.
